TWO EASY, DELICIOUS AND SATISFYING DESSERTS

In this class we made two easy desserts that don’t require an oven. 

The first is Easy Vegan Fudge

If you are a chocolate fudge lover, this is for you. While I don’t have any grand illusions that this is a health-promoting recipe, it is from Shane and Simple. Shane’s recipes are whole food plant-based, so if you are indulging, at least each ingredient is a real, unprocessed ingredient. It is oil-free, gluten-free and dairy free. 

This recipe is pretty easy, and it will last in the freezer for months. When I make this, I only eat a little bit and then put the rest in the freezer so I can grab a piece when I have a hankering. Or I bring some to friends. It is definitely a rich treat!

The other recipe is for a Strawberry Mousse:

Shockingly not everyone loves chocolate. When I was a kid, if it wasn’t chocolate, it wasn’t dessert. Nowadays, I often prefer a non- chocolatey, or fruity dessert. 

The Strawberry Mousse recipe is originally from Nutritionstudies.org which is the T. Colin Campbell Center for Nutrition Studies program through Cornell. I got my Plant-Based Nutrition certificate through this program and their website offers dozens of healthy recipes and resources.  You can be sure it is healthy as a dessert can be.
