This class was a collaboration with vegan psychologist, Dr. Angela Crawford. While I cooked, she spoke of the relationship between the food we eat and our mood! She is also the author of The Vegan Transformation.
It turns out that certain plant foods are particularly good at lifting mood. So we chose a dish and a whole meal that incorporated a few of those plant ingredients.

This Bulgogi is a great way to get some wonderful flavors into a lesser-known plant-based protein. It’s made with soy curls! I had never used soy curls before making this dish and didn’t know what they were or what to expect. (And now I use them in a few dishes.) I’m delighted to share this with you.
The only challenge with this recipe is that you need to order the soy curls online. I usually get them from Amazon, but they are available elsewhere too. And if you don’t have soy curls and wish to make the dish anyway, you can substitute tofu or mushrooms. (I’ve never used either, so if you do, please let me know how it turns out.)
