BEST VEGAN CHILI

In the summer of 2022 I stopped in Michigan to visit my mom and her partner. She wanted to serve
a home cooked meal when I arrived. She knew she had to find a vegan recipe that she was both
willing to make and eat. Before I even suggested that she look at Nora Cooks’ blog, she had
found her award-winning recipe. The chili was ready when I arrived, and it was delicious.

Mom made a few tweaks and it was perfect. When I returned home, I tried my own batch,
adopting mom’s tweaks, and it was just as delicious, and super easy. Since then, I’ve learned
that we don’t need to use oil to sauté onion and garlic, which is reflected in this recipe.

Here’s my mom’s and my take on one of the best vegan chili’s I’ve had.

Note: We baked cornbread in a separate class. If you want to enjoy a healthy cornbread with
the chili, be sure to find that class. It’s almost a sin to eat chili without cornbread!
