Overnight Oats and Peanut Butter Oat Bars:

Overnight Oats
I discovered overnight oats a few summers ago and I immediately fell in love. My first
overnight oats had coconut on top which was decadent. The recipe has endless
options. The hardest part is remembering to dump it all into a bowl the night before. But
how delightful the next morning when breakfast is ready to go!
Peanut Butter Oat Bars:
l love the ease of having a breakfast or afternoon snack on hand. It
takes just a few minutes to melt the nut butter with syrup, add oats and a few other
ingredients and bake. So easy that I make them all the time now. And they are much
more wallet-friendly than the bars I was getting at the farmer’s market. You can
substitute other nut butters if you don’t like or need a break from peanut butter.
