TWO TASTY PASTA DISHES
These dishes were originally part of the Summer “No Oven” Cooking Class where we learned to make plant-based dishes that did not require an oven. They are both wonderful year-round but it’s nice having a summer repertoire where an oven is not required.
Cauliflower Alfredo Sauce Pasta
Who doesn’t love Alfredo sauce? But traditional Alfredo is heavy and unhealthy, not to mention cruel. Ok, I said it (eating dairy is cruel). Here’s a wonderful, healthier, cruelty-free version made with cauliflower! (And you would never know it either.) Another dish that you can sneak veggies into.
Zucchini Sauce Pasta Dish
I’m always looking for quick but healthy weeknight meals. Pasta is quick and inexpensive and healthy. But it can be “same old same old”. Not so when you have a variety of sauces to make is sparkle!
I now have a bunch of different sauces to choose from, including this Zucchini Pasta dish. My first thought when I made this the first time was: That is pretty good for an easy weeknight meal- I will definitely make that again. AND, my husband, who doesn’t eat zucchini, ate zucchini (because it was hidden in the sauce, and he had no clue). Try this out- even if you think you don’t like zucchini.
